Thankful Thurday May 28, 2015, and Upcycled Scone Mix Box

Morning Sweet Friends,

How are things in your corner 
of the world??
Well and Happy I hope.

Things are going well here,
still coughing my head off
and having some tiredness
still but way way better than
it was last week.

On Tuesday I told you I was
very energetic, in fact, I think
I maybe overdid it, but any
who, I decided in all my great
enthusiasm, that this pretty
Scone box, just needed to be
enjoyed more like the scones
mix that was in the box.
They were very good especially
with Lemon curd on them!!  lol
and you know how I like pretty
packaging, so decided to do
something with it, so found
some greenery, and some faux
blueberry picks.  Put some 
stones in the bottom of the box
to make it sturdy so it wouldn't
tip over easily, then just stuck
in the greenery and the blue
berry picks, and well ah, a new
decoration for my kitchen table.
Easy Peasy and a no cost project,
works for me........lol


Have done some other playing
this week, and actually changed
this vignette you see here again,
since I have had the rooster and
the hen on the table since early
march.............and did a table
scape as well,  so you will be
seeing that sometime soon as
well.

for a very enjoyable time with Scott,
 Megan and the baby on Memorial Day,
and delicious burgers/hotdogs, Broccoli
 salad, watermelon and cheesecake.......
It was all yummy!!  
Think this was the first time we have 
gotten together for Memorial day in a 
long time, so that an extra nice
 surprise.........

That Dee and Jerry got moved on
Monday and had their closing
on Tuesday afternoon.  So they
are proud home owners once
again...........and having a fun
time getting settled in and re-
decorating. So happy for them.

for another Campfire Chicken 
recipe that I found on the Kraft
 food website.  It is called
" Foil-packet Southwestern 
Chicken Dinner".
Love these cause you can make
them, pop them in the oven,
eat them right out of the foil
if you want, and then there
is no clean up......Heaven!! lol
oh yea, and they are delicious.
Nice easy din din, especially 
if you are in a hurry...........

to hear of the Lord healing a 9 yr. old
little boy of cancer.  It is my daughter
in love, Megan's lil cousin. This is his
2nd bout with cancer, and he was truly
at death's door and there was nothing
else to be done for him, and they had
 their Pastor come and pray with him
 thinking he would be passing very
 soon, but now he is cancer free and
probably home by now, after months
and months in the hospital having
all sorts of treatments. What a
wonderful testimony of God's
healing grace and mercy. I am so
thrilled for he and his family.
Best news I have heard in a long time.

for the fun of having our lil darling
 help me make cookies on Wed.
  She was so cute, she stood on a 
chair right beside me and did 
exactly what I told her to do, think
 her fav part was holding the handle 
of the cookie scoop as I squeezed it
 to release the dough!  lol  
and eating them of course!!
Today I was thinking I should have
had hubby takes some pics of it,
since this was another first, well,
with me anyway......

that some good quality T-shirts
 that I had ordered and that were 
suppose to be in on May 19th, were
on back order until June 18th,
But they shipped today......
who hoo!
Had been wondering if I should
just cancell the order, and so 
glad I didn't now.
Cause I am a T-shirt and shorts 
kind of girl, especially around
the house.

for leftover pizza today, and 
that we found out about a 
month ago, that if we reheat
 it in the oven wrapped in foil,
 it tastes just like it does when
you first get it fresh. Which
translates Yummo!!

for another lil  money saving tip
 I learned from a girl at the pizza
 shop. Rather than ordering a
 Specialty pizza, like a Vegetarian, 
which is what we usually get,
order a plain cheese pizza, then
just add the toppings, and it 
should come out about
 $3-4.oo less, at least it has
for us!

Some great toppings that we

have put on ours are: chicken,
 onions, roasted red peppers,
 black olives spinach, and 
sometimes mushrooms. 
 They aren't my fav!~!  l0l

for my backyard and the way
 it looks right now, freshly mowed, 
part of it is  shaded and the other 
part sunny, with the sun sort of
 filtering thru the trees and just
 looks so pretty. That is my view
 out the window right now, and
it just blesses my heart.

for another really good movie
that was based on a true story.
Know how I love those.  It was
sad in parts, but turns out
 really well. It was called
 "Gimme shelter". 
We highly recommend it.

Nellie's Special Chicken Salad Recipe



 Hello Sweet Friends,

Hope you had a nice weekend....


Mine was better than my week fortunately,
altho I am still having some cold type symptoms,
I don't think I am contagious since I am no longer
running a fever and very careful when I cough.
So I very happily got to go to church on Sunday
 and over to Scott and Megans for Picnic fare on
 Monday.  We had a very nice time and it was
great to get out of the house after being home
bound and laying around all week.  After all that
rest last week I was like a race horse out of the
starting gate this morning!!  lol

As I was folding clothes this morning I was
watching a show where there was a chef
making Chicken Salad,  and I thought oh,
yum,  that sure sounds good.  His was a
sweet type of Chicken Salad,  mine is not!!
For some reason I don't like
 sweet chicken salad.

  Anywho, I decided I would make some
of my chicken salad for lunch........so thought
I would share my own contrived recipe,  as my 

daughter is always asking me to tell her what
 I put in it again, and since I am trying to record
 all the family recipes for posterity.  lol  Then
 she can just go look it up if she wants............
.and I thought
YOU
 might just enjoy it too.
So as I made it,  I took pics of each step.


Nellie's Special Chicken Salad Recipe

Today I only had canned Chicken, so that is what
I used,  but you can use rotisserie, baked or boiled
chicken.............






Only had 1 can,  but typically I use 2.....and the
recipe is based on just one can.

This is the best canned chicken I have ever tasted.  
We have actually used it to make tacos too, and it
 was simply delicious. So highly recommend it!
and no one paid me to say that either!!  lol

 I can only find it at Publix Supermarket, and it was
one of those unexpected finds a few years ago.
I mean really Bumble Bee chicken, I thought it
 was Bumble Bee Tuna...lol
Which of course it is, but now they have Chicken too! 







Here it is in the bowl, after I have rinsed and drained
it in the colander.That  helps gets rid of any tinny taste 
and cuts the salt in half, if there is any.  I do that with
 any can veggies I use as well.






Now clean and slice up about 5-6 scallions, I use
the whole scallion, the white part and the green part.




Now clean and thinly slice up, 2 ribs of celery




Add 3 heaping Tablespoonsful of Dill Pickle Relish





Add about 10-12 torn baby spinach leaves.If I don't
have spinach sometimes I will chop up some 
Romaine lettuce to add in, both are great!






Now add a 1/4 cup of chopped pecans





Add 4 heaping Tablespoonsful of Hellmans Light Mayo,
and 1/2 tsp. of yellow mustard.


Also salt and pepper to taste. I have a sea salt grinder
and pepper grinder, so I did a couple of twists of salt 
and about 5 twist of pepper.






Now mix it all up and you are ready for lunch.






I enjoy having mine on toasted bread.  I don't add any
extra mayo to the bread,  just plop the chicken salad on,
and add the tomato and lettuce,  sometimes I put it on
 the sandwich and sometimes I just eat it by itself.

You can also put it on a Croissant or eat it in a tomato
with some crackers.  all these ways are great!!

My bread was a lil small as I was running out and
it gets smaller as you go in the package...............lol





Now wanted to tell you about the bread,  this is freshly
baked daily at our Publix supermarket.  It is called 
"Five Grain Italian Bread".  Since I try to eat as gluten
free as possible,  I have found that this bread does 
not have any added wheat gluten, and altho it does
have wheat flour in it.........for some reason it really
doesn't bother me.  So thought if you are trying to
eat gluten free you just might want to try your luck
with it too.........cause I know there are not a lot
 of good gluten free breads out there, and this
 really is delicious bread!!

Greetings Sweet Friends,

Hope your week has been a good one!


Mine not so good health wise anyway,
last post told you I was hoping to watch
our lil darling on Wed., but woke up on
Wed. morning feeling like a truck ran over 
me again and running a fever as well,
then last night I got up off the sofa and
somehow threw my back out!!  Some
times life can really be ridiculous.....lol
 Fortunately the fever is finally gone today
 so far, but still feeling pretty punk. I am
a low grade fever runner, so seems like
it takes me forever to get over things
other people get over in a couple of 
days. One good thing.... I have lost
a few pounds!!  lol


The pics today are still from our Mother's
Day table with a lil change. I decided to 
take the basket out of the centerpiece 
cause it just seemed to crowded looking 
and I do not like sitting at a crowded
 table, so decided to use a green place
mat instead and I liked it a lot better,
also added some photoshop affects
for fun.............

Have been adding my thankfuls all week 
when I think of them, so they are all 
ready to go............

that I had  some time to work on cards again
on Saturday, and am making more progress.
So happy about that.

for a new student in Sunday School, this was her
 first time to actually be in Sunday school and
 worship service at our church.  She seems like a 
really sweet young lady, and looks like she should
be in the teen class, but she has 4 children...........
That was hard to believe!!  lol

that another one of our students offered to
 have a b-b-cue at their house the end of June. 
 So great to see these young folks stepping
 up and owning their own group.
  That is progress!

that GOD gave us the Sabbath Day to rest,
as it takes any guilt out it, and it just refresh's
 us so, and get us ready for another week, which
 makes us ready to get to work again, doing
 whatever we do for  work..........

I wrote this early on Monday morning before

I started to feel bad, and it is really true for
 most Monday mornings.

that Dee and Jerry got so much packing
done over the weekend and found some
one to move them. They are moving on 
Memorial Day to their new home, but
all the moving services they called were
not working that day or they just could 
not get ahold of them..............but it was
 too late to change the closing date at
 this point. So thank the Lord someone
finally called them back..............
so they now have MOVERS!! yeah!!

for another pair of palazzo pants that Dee
 got me for Mother's day when we went out
 shopping last week and some really cute
earrings to match.  Which makes another 
new outfit.  So I am very happy about that....
so think I am good for summer wear now.

I ordered some scarves hoping one will
look good with it, hopefully they will
come in soon.

Note: one came this afternoon and it
looks great, so guess I will see which
one I like best when the 2nd one
arrives..................

for the sweetest story I read on yahoo news
Tuesday night about a 5 yr. old boy who 
begged his Mom to buy dinner for a homeless
 man and then the lil boy sang a prayer with him.
 Ever heard the saying " a child shall lead them",
I would sure say this is the case...  this lil
boy touched a lot of hearts with his sweetness 
as the story went viral. I would say this Mom
 should be very proud..........and I think she is.
I got a email from focus on the family and they
even covered the story too.  It will sure bless
your heart.....

for my sweet hubby bringing home Olive
Garden for dinner on Wed. and tonight, and
 especially for the chicken Gnocchi soup. 
It tasted wonderful and felt so good on my sore
 throat. I have been craving soup for a few days,
 which is totally abnormal for me in the 
Spring/Summer!!
Both dinners were scrumptious....but the
soup was the star of the show for me!!  lol

for another story I just heard on Yahoo news about
a baby sleeping in his crib when a lady who was
learning to drive ran into his bedroom, and hit his 
crib, altho the crib collapsed, the baby was fine....
That is a truly a miracle. 

Can you even imagine having that happen??

for a really good hard rain on Wed. as our yard was
 looking burnt in some areas, so we definitely needed
 it..........yard looks great today!!

that the hail that came with the rain on Wed.was 
only pebble size, so didn't do any damage to
 anything. One time many many years ago we 
had hail that was golf ball size and it really
damaged our roof, and of course, everyone
in the surrounding area had damage.......

Our neighbors was out in it when it happened
 and their car looked like someone took a ball 
peen hammer to it.

for State Farm Insurance Company - was just
reminded of this as I was telling you about the
hail storm, as they took care of us very well,
on all that damage and on several situations
we have had since.  These were over the 
course, of 35 years, and we are so grateful
for a good Ins. Company. Some of our 
neighbors did not have such good results
 with their Insurance companies.
