Nellie's Special Chicken Salad Recipe



 Hello Sweet Friends,

Hope you had a nice weekend....


Mine was better than my week fortunately,
altho I am still having some cold type symptoms,
I don't think I am contagious since I am no longer
running a fever and very careful when I cough.
So I very happily got to go to church on Sunday
 and over to Scott and Megans for Picnic fare on
 Monday.  We had a very nice time and it was
great to get out of the house after being home
bound and laying around all week.  After all that
rest last week I was like a race horse out of the
starting gate this morning!!  lol

As I was folding clothes this morning I was
watching a show where there was a chef
making Chicken Salad,  and I thought oh,
yum,  that sure sounds good.  His was a
sweet type of Chicken Salad,  mine is not!!
For some reason I don't like
 sweet chicken salad.

  Anywho, I decided I would make some
of my chicken salad for lunch........so thought
I would share my own contrived recipe,  as my 

daughter is always asking me to tell her what
 I put in it again, and since I am trying to record
 all the family recipes for posterity.  lol  Then
 she can just go look it up if she wants............
.and I thought
YOU
 might just enjoy it too.
So as I made it,  I took pics of each step.


Nellie's Special Chicken Salad Recipe

Today I only had canned Chicken, so that is what
I used,  but you can use rotisserie, baked or boiled
chicken.............






Only had 1 can,  but typically I use 2.....and the
recipe is based on just one can.

This is the best canned chicken I have ever tasted.  
We have actually used it to make tacos too, and it
 was simply delicious. So highly recommend it!
and no one paid me to say that either!!  lol

 I can only find it at Publix Supermarket, and it was
one of those unexpected finds a few years ago.
I mean really Bumble Bee chicken, I thought it
 was Bumble Bee Tuna...lol
Which of course it is, but now they have Chicken too! 







Here it is in the bowl, after I have rinsed and drained
it in the colander.That  helps gets rid of any tinny taste 
and cuts the salt in half, if there is any.  I do that with
 any can veggies I use as well.






Now clean and slice up about 5-6 scallions, I use
the whole scallion, the white part and the green part.




Now clean and thinly slice up, 2 ribs of celery




Add 3 heaping Tablespoonsful of Dill Pickle Relish





Add about 10-12 torn baby spinach leaves.If I don't
have spinach sometimes I will chop up some 
Romaine lettuce to add in, both are great!






Now add a 1/4 cup of chopped pecans





Add 4 heaping Tablespoonsful of Hellmans Light Mayo,
and 1/2 tsp. of yellow mustard.


Also salt and pepper to taste. I have a sea salt grinder
and pepper grinder, so I did a couple of twists of salt 
and about 5 twist of pepper.






Now mix it all up and you are ready for lunch.






I enjoy having mine on toasted bread.  I don't add any
extra mayo to the bread,  just plop the chicken salad on,
and add the tomato and lettuce,  sometimes I put it on
 the sandwich and sometimes I just eat it by itself.

You can also put it on a Croissant or eat it in a tomato
with some crackers.  all these ways are great!!

My bread was a lil small as I was running out and
it gets smaller as you go in the package...............lol





Now wanted to tell you about the bread,  this is freshly
baked daily at our Publix supermarket.  It is called 
"Five Grain Italian Bread".  Since I try to eat as gluten
free as possible,  I have found that this bread does 
not have any added wheat gluten, and altho it does
have wheat flour in it.........for some reason it really
doesn't bother me.  So thought if you are trying to
eat gluten free you just might want to try your luck
with it too.........cause I know there are not a lot
 of good gluten free breads out there, and this
 really is delicious bread!!

  1. Glad you're improving, Nellie - and that chicken salad sounds yummy. (Funny how everyone has just a little twist to their recipes.)

    I can hardly believe the week is half over already! It just rained really hard for quite awhile this afternoon. Hubby was needing to mow, but guess we won't be doing that. I need to re-group and figure out how to use the next few hours since we can't be outside.

  2. Ooooh! Yum! I love chicken salad on toasted bread. I thought about you when I was at Publix in Florida. We finally got the fried chicken. People were shocked... this is the best fried chicken in the world. This Publix sure is under rated! We had an incredible time in Florida. And thank goodness we soaked up all that sun since it's clouds and rain, rain, rain here in Texas.
    My new kitty Gigie is so easy! I can take her in the car, to the vet, on a leash. She's just so calm. Another blessing from God. :)
    I hope you feel better very soon. My sister also caught this weird bug. And I hear lots of people coughing in the stores. Must be something going around.

  3. That looks really yummy, Nellie! My "canned chicken allegiance" is to Costco's Kirkland's brand...so, so good! I like your idea of adding in some spinach to make it extra healthy.
