Mock chicken Salad and Pasta salad recipe

Hope you are having a good week, so far!!


Mine has been good and busy!!  lol  But a fun busy................
Am getting prepared for my daughter's birthday celebration
this coming Saturday,  then decided since she and Jerry
were already coming over tonight.... that I would just make
her an early more casual birthday dinner,  since it is just the
 night before her birthday and we want see her till Saturday.  


So I have been planning 2 tables and 2 meals, 2
 desserts, and shopping for gifts,  and making her a card,
  so it is all time consuming stuff,  but stuff that I love to do, 
 so it is energizing and fun to me,  I love thinking about and
 finding ways to make people feel special.  I think everyone
should feel special on their day,  and have to say we tend
to drag our birthday celebrations out for a week or almost
a week!!  lol


I actually did a simple woman's daybook yesterday morning,
and did the whole entire thing and  when I went to post a
picture at the bottom somehow lost the entire post,  and 
because I had too many other fish to fry thought..... oh well, 
guess I'll try again tomorrow!!  lol
A bit frustrating for sure, course, if that is the worst thing
I have to deal with... I am a blessed woman indeed!


Some of you wanted the
Mock  Chick-Fil-A, Chicken salad recipe
so thought I would post it today.
It really is good......................

Ingredients
*Denotes comments by lil ol'  me!!


2 large cooked chicken breasts (about 2 cups)
*(I typically, use rotisserie chicken,  but had a friend
 who had her husband grill the chicken and then made it 
into chicken salad, she said it was really good!)


1/3 cup of celery (about 2 stalks)


1/2 teaspoon of sugar (optional)
*(I didn't use that myself.)


1/4 teaspoon salt


1/4 teaspoon ground pepper
*(I usually just do it to taste, with the salt
and pepper)


1/3 cup sweet pickle relish


1/2-2/3 cup mayonnaise (depends on how wet you
like your salad) * I try to make it heart healthy by
using Hellmans lite Mayonnaise


Toasted bread (wholewheat or thick texas toast are 
really good)  *We used toasted Arnolds Oatnut bread.


Directions


1. Pull apart the chicken into large chunks and either
cut it into small diced pieces or process in a mini
food processor. *(I actually leave mine in chunks,
small, not huge chunks)


2.  Place chicken in a large bowl and add all the 
remaining ingredients (except bread)


3.  Mix well.


4.  Toast your bread of choice and place salad in
between toasted bread and serve.


5.  You can also serve it in a lettuce cup with 
crackers for a little variety.

How is the world treating you today???

Well, I hope!!

If you came by yesterday you know

I wasn't feeling real great yesterday,

which leads me to my number 1 thankful.

I am thankful

to be feeling much much better today!

I am thankful

for prayer, Alleve sinus medication,Vitamins
 B and C, moringa leaves, exercise and rest. 
 Cause I did all of that yesterday.... and
 I feel great today!  lol

I am thankful

for all the rain we have been getting this week,
dreary that it has been,  but great for the lawn
and does bring our temps down somewhat.

I am thankful
for a young friend we have who is doing the
"Love Dare" book, desperately, trying to win
 his wife back.  He is such a sweet kid, course,
 to us, he is a kid, but he is really a man!!  lol
But bless his heart,  he is willing to do what
ever it takes, and has been doing that for
awhile now..........


If you feel so led, please pray the Lord does
 a real work there.  I am so tired of seeing
 good people divorce, and they have 2 innocent
and precious children being devastated in the
wake of it all.....

I am thankful
for the convenience of water in our world.
Water to shower, do dishes, brush your
 teeth, wash your hair, flush your potty,
 water the lawn and plants, and of course,
 to drink and cook with and.... it is right at 
the touch of our fingertips.


Just recently we heard a story about
a little boy in Kenya (I think it was) that
had to walk 4-6 hrs. every day just to 
get buckets of water, but then not only 
did he have to walk all that way, and carry
the water back, he had to wait for hours
 until every one else got their water, because
 he was too little to fight for himself.


His whole day is spent just trying to
survive another day..................


Can you just even imagine that???
Breaks my heart to even think about it!




Oh we are so so blessed in this nation.

for the grace of God and the way He works
in the life of his people.  It is so exciting 
to see the Lord turn someone's life around.

Dee and Jerry twice this week.

for a cool, mock recipe my daughter 
told me about for making "Chick Fil A's"
chicken salad.  It is delish!

I have figured out what to do for my
 daughter DeeAnna's birthday table, and
 gift, since it is coming up the weekend 
after next.  Always makes it easier
 when I figure that out early.

"A Gifting" .......Celebrating my 100+ faithful followers

Morning Sweet Friends,

How are you today???

Day going well???

Hope so.................

I am feeling just a bit under the weather, 

nothing too bad, think my daughter shared 

her cold with me!! lol..... So I am achy and

headachy,  just took some sinus meds,

so hope that will do the trick soon.

Was tempted not to post today,  but since I 

told yall last week about my Special Celebration 

for my 100+ now followers, thought

I had better make good on my promise!!

I have to say I am very excited, because after 

my first year blogging Anniversary came I wanted

 to Gift one of my bloggy friends then, but that

 is right when hubby got laid off,  then this year,

 on my 2nd Anniversary, he was still laid off, so

 now that we aren't on such a strict budget,

decided not to wait till next years Anniverary, 

 and thought a Celebration in honor of my

100+ faithful followers would be a great

reason to have a gifting!!

and yes, these are the gifts above.....

Sort of a "Get Ready for Fall" theme,  course, if you have

a Tuscan look it would go even better...........

and who knows there could be another

we are having a cool 89 degree day right this minute,

only because it rained all morning and

Family Room Rearrangement

Good Morning Sweet Friends,

How are you this fine rainy, dreary,

windy morning,  course, that is what my

weather is like today, maybe yours

is sunshiny!  Hope it is sunshiny.......

 at least in your heart!!

Last week I was watching the Nate Show and

found out.... I already do one of his suggestions 

for a quick and easy decorating tip, that cost

you 0 dollars................................

One thing I love to do with every season, and that

Nate suggests......... is moving the furniture around

 for a new look.  I have been doing that for years now.

The main room I move around now is my family

room,  (note the  header picture) cause it is the only

 room I can do by myself.

Before my pinched nerve, I could do others rooms, 

 but don't dare do that anymore, and must enlist help.

I have to say,  I used to wonder when I was younger

 why older people never moved their furniture around. 

  well,  I know the answer to that now...................lol

Just in case you don't already know you can click

In the Spring I have the room arranged with

the sofa looking towards the fireplace and

the big chair over by the fireplace and 2

captains chairs flanking both sides of the sofa.

I use pinks as my accent color and a lot of

whites too,  as this, and my header picture

show.

The above picture starts the new look!!

Then when summer arrives,  I rotate the sofa to

the right where it faces the french doors to the

porch, so you can see outside cause the yard

usually looks nice and green and lush.

Most years, I add some shells and/or at least

 move around the table tops,  I had planned to do

 that this year,  but right after I moved the room around

we had the issues with the wedding situation,

so just never got back to it,  and by the time

I did I thought Fall is right around the corner

anyway...................

I also remove our fireplace tools for spring and 

summer and add greenery to the fireplace!

toward the front of the house,  kitchen on the left,  and
living room on the right.  (which rarely gets used I might add).
but do love that room!! The door in the middle is to the
foyer and where everyone enter thru the front door.

This was taken from the front of the house
looking towards the back,  I am standing
right by the big chair you can see in the
 previous picture.  It is now facing the
 fireplace with a lil table beside it.

You can just see the edge of the lil table here
and of course, the big chair,  we love this chair,
and the thing hubby loves the most is it and the
sofa all recline.  We have truly enjoyed that!!.
 Then  2 captain chairs from my dining
room set.  Makes a cozy lil area for chatting!


I sometimes think this is my fav arrangement
till I move it the next time...............lol


That is why moving your furniture is so much
fun,  cause you almost always like the new
way, cause it is such a nice change of pace!!


Just yesterday Nate featured two homes with
fireplaces that they painted white........I loved
that look and would love to paint our's white,
be still my heart,  but not sure hubby is gonna
go for it,  when I called him out to see it......
he sort of grimaced and didn't stick around
too long................if you know what I mean!!  lol


I know that look..........."Oh No,  she wants to
cover up this pretty brick!!!  lol
Why would she want to do that!!  It so natural
and pretty................true,  but it is also old
and tired and needs and update!!


Course, doubt you could ever undo it if you
wanted to.........I would do it in a second,
but then we have all dark woodwork and
dark slotted pine on the wall behind, so
think you might have to paint it all..........
not really sure I am up for that either!!


So maybe having a reluctant hubby is
a very good thing...............or I might be
redoing every pc. of woodwork in the
house..................Hmmmm!!


But hey,  if I had Nate's team of painters
and helpers if I got stuck................
I  just might really go for it!!   lol
and hubby might too!!  lol


For now I am content with my little room
rearrangement,  it is safe,  sure and 
sweet for this simple woman!!
