Great Salad Recipe - My Rendition of BHG Succotash Salad





Howdy Sweet Friends,

How are you doing this week?
Well, I hope................

I couldn't sleep........neck problems from
yard work again!!  lol  So decided I might
as well make myself useful.

Don't know about you, but as the temperatures
are warming up considerably, I love finding
new recipes that help keep my kitchen cool.
So thought I would post my rendition of a 
lovely salad I saw on a BHG email I received
last week and told you if I made it and liked it,
 I would share it with you.  so I did make it,
  and we did like it.
So here is a link to their recipe.

Loved the picture on their recipe and how it was
 made on a platter, thought the presentation was 
wonderful, but as I was thinking about it....
 didn't think it was practical for us, so I just
 did a plate for each of us,  since there is 
just 2 of us.  Also changed some things in
the recipe as well.  The first time I made
it I used their buttermilk avocado dressing,
and we enjoyed it,  but the 2nd time I used
Ken's steak house dressing in ranch flavor an
 liked it better.  Was thinking ranch mixed 
with some avocado might be great, so just 
added the avocado to the salad instead.
Anyway here is my easier.....
at least I think so.... rendition of it.


Ingredients

1 head of Butter lettuce
you will probably only need half the head,
so you will have some left to do it again! 

!/4  to 1/2 a bag of frozen niblets yellow corn, 
cooked as package directs, then cooled.

1/2 a bag of frozen green peas, thawed and
uncooked (know it sounds terrible but you will 
see how good they are, and lima beans 
somehow just didn't sound good to me.  lol

4 slices of Hormel Bacon, crisp-cooked and
crumbled (the one with no nitrites or nitrates
 It is delicious, I promise!  (I can only find it
at Walmart or Target supercenter)
Of course, you can use any bacon!  lol

Red onion,  I just sliced them and then 
quartered the slices.  Add as lil or as
much as you desire.

1 avocado, seeded, peeled and sliced
1/2 on each salad

1/4 - 1/2 cup of shredded cheddar cheese
(or as much or as little as you prefer)
Just not into blue or feta cheese myself  lol

Grilled or Rotisserie Chicken
(again your desired amount)

Ken's Steak House Dressing - Ranch flavor
Your desired amount.

This recipe should make 2 plates of salad.


Directions
Arrange on each plate in the order I have the
 ingredients listed.  I just used a tomato for
a garnish,  but this salad could easily taste
great with tomatoes too,  next time I might
just add tomatoes and black olives.


If you don't see any chicken in this pic, that is because I made it for
 lunch to go with something else and left the chicken off, this time.

Hope this finds you well and happy!

It has been a good week here, a few
skirmishes here and there, but we are all
the better for it.  

You will see what has been going on
here via my thankful list.

Here we go...............

I am thankful
that we finally found another car last 
Saturday after searching and seeing quite
 a few cars these passed 61/2 weeks.
(In case you forgot or didn't know our old 
one just died on his way home from work 
back in February, much to our shock and 
dismay, since we had just replaced our
 old van the end of september, thinking the
other car would be around considerably
longer).  Course, that's how it is.....
life happens 
while we are making our plans!  lol

I am thankful 
that hubby loves his new, to us, 2010
silver Toyota Corollo, that is so great
on gas...........This is his car,  and I am
so delighted for him, cause all our 
married life he has always given me
the newer car,  so for once he has
the newer car,  so thrilled for him.

I am thankful
indeed, that the search is over..........
and that is no longer hanging over our
 heads..............cause we were putting lots
 of miles on our new, to us van,  and eating 
up miles on the warranty.  Plus you just feel
that things are sort of unfinished, as it has
changed your routines and stuff.

that I have my van back now, so very nice
 to know that if I want to go somewhere
I can .................or I don't have to wait
till Wed. or the weekend.

we got our taxes done,  and we don't owe
any money.  So that is always great news.

that a little conflict in the family was quickly
resolved and back to normal.
Always a good thing...............

that  Dee found a way for a friend of ours to
 get a  much needed medical test at a fairly 
reasonable price since she has no insurance.  
That is such a blessing, answered prayer,
 and provision from the Lord....................

that we get to keep Brooklyn again on
Saturday,  will be the first time at our house.
Hubby and I both are looking forward to it.

for the yard work we got done this week,
plenty more where that came from, but
grateful for what has happened already.

I am thankful
for some new recipes I found on the
Better Homes and Gardens website.
Some really great looking salads.  Once
I try them out,  if we like them,  I will
share them with you.  I am very excited
to try them.  Earlier this week I made
 that Cranberry Chicken salad,  and can 
not tell you how much we enjoyed it.
If you are interested,

This time I used strawberries in place
of the raspberries and shredded
parmesan cheese in place of the
mozzarella, it was even more delicious,
I think,  course, it has been a while
since we had it,  so hard to say if
that is really true..........but either way
we  luvvvvvvvvv  it!!

I am thankful
for a dear sweet English friend who told me 
many years ago about the movie
 "Anne of Green Gables". I had never seen it, 
and she said oh my, you must see it sometime, 
You would love it...................

I am thankful 
that recently, we found out they had a
number of the Anne of Green Gables movies
 on Netflix, and we have now watched 2 of them,
 and I must  say we concur with what she said.
They are just simply wonderful,and captivating,
clean and sweet movies with very interesting stories,
from another time period. Anne is a great heroine,
coming from a very difficult start,  and turning into an
astoundingly wonderful and loving woman.


If you have not seen it,  don't dally.........as you will
 really enjoy them so much.......
Every time the movie ends, hubby and I just
hate that it is over.................lol




I had to come back for a thankful
 baker's dozen.  lol

I am thankful
for a new food item I just found at Publix,
and you know how I love, love, love finding
new things to eat.  It is called Carribean
chicken Salad  and oh my heavens, it is
 sooo good.  A real treat, I have to say.
Don't know who comes up with their recipes,
but they are delightful.

 You can get it in the deli, just in case you have
a Publix grocery store near you.  It is made
 with mango chutney and roasted red peppers. 
 I almost didn't get it cause thought what if I 
don't like it,  but then thought hubby will like it 
for sure, he is like the old cereal commercial,
 give it to Mikey,  he eats anything!!  He and
 my son are the adventurous foodies in our 
family,  me and Dee are bit more picky.


Just had to tell you in case you want to 
try it.   Don't think you will be disappointed!

Bet cha can't tell where I was and what I was doing today.....

Happy Wednesday 
Sweet Friends,

Finally a post...................lol
Don't die from shock now.........

Hope you are all doing great, and that
 those of you who weren't, are now
 enjoying some spring weather........and 
know if so,  you are loving it..............



This was right when Mommy was leaving cause I had a full
tummy...........................I am thinking and dreaming!!




I have worked out in the yard several times this week,




paying for it with neck and allergy problems,  but
 enjoying it anyway,  Just goes with the territory!



Quite a bit happened around her this week,  so will tell
you about it tomorrow................

Hadn't seen her in over a week,  and boy has she grown.
She is 5 weeks and 2 days now.
Had such fun with her cause for the first time she was
awake for a long while.  Megan and Dee went to lunch
and shopping so I had her all to myself. Hubby had 
dental appt. so afterwards he came over and brought
lunch,  and then finished his day of working at home,
over at Scott and Megans house.





She is getting a bit more active and showing more
facial expressions,  she likes trying to pull herself
up to a sitting position, with help of course, and likes
 to do it over and over again,  and has such a look of
 satisfaction on her sweet lil face,  like look what I just
 did.........ain't I something!!  So cute!



These were  jamies we got her.  She
was getting a lil tired from all the playing.


 It looked like she did more sleeping than staying
awake but that is because we were playing not
taking pictures.................we patty caked and
bycycled and did pull ups................lol

Thought yall would get a kick out of the pictures,
I sure do,  course, I am her grammy!!  lol

Welcome to Thankful Thursday - April 4, 2013

Greetings Sweet Friends,

Hope this finds you well and happy,
and that you have had a great week.

My week has been good,  altho rather uneventful,
but that was a good thing,  as March was totally
eventful...........lol
As the picture below will attest to.......
and then their was company for a few days every
 week and looking for a car, and birthdays and 
Easter, and babysitting our new lil angel, such
pure joy!
so we kept quite busy....................
and that's just the stuff I remember!  lol

Not Complaining, Just saying !!

I am thankful
for the wonderful Easter and Birthday
celebration we had last Sunday with
the whole family.  Always great to be
together and now even more fun with
our newest family member, even if 
she is sleeping most of the time.  lol


Here is our lil darling, one day away from 4 weeks
 old.......She loves to sleep with her hand up to her face,
 think we might have to nick name her "The Thinker".
She was just sawing logs..............lol

I am thankful
for the visit we had with an old friend
last week,  we had such a good time
catching up. I made him Cuban food,  as 
he  remembered me making that years
 ago when we all met.  So made it again,
 and think we all enjoyed it ..............since it
had been awhile since I made it for us too.

for a visit with a friend here in town this
week,  as we have not seen each other
for months, so it was great to finally get
some time to catch up,  and she was
sweet to bring me a card and birthday
gift...........love how those special days
get stretched out.............

that I found a cute blouse to go with shorts
or pants at Kohls's yesterday.

that we had a good rain last night and hopefully
more to come tonight,  as I am hoping it will
wash away all the pollen, since everyone is
so tired from allergies. May we be peppier
by tomorrow or the weekend!  lol

I am thankful
that we finally got our bushes pruned in
our front  flower bed,  they are legistrum and
they sort of take over after a few years,  so
we have to cut them way back every few
years, and that should have been last year.
  Course, it will be awhile before they 
pop out with some leaves,  but they will 
sure be more manageable when they do.

I am thankful 
for these lovely hydrangeas you are seeing
pics of here. My SIL Susan gave them to me for 
my birthday,. Hydrangeas are one of my all
time favorites, and am so hoping they grow well
 once I plant them in the ground. Scott gave me
 some pointers so hoping that will help in this 
sandy Florida soil we have.  They are really 
like the color in my header picture, but when
you take pics that look more purpley.  Not
sure that is really a word,  but works for me!

for all the lovely cards and gifts I received
for my birthday and the sweet thoughts
behind them.

I am thankful
that Dee and Jerry's kitchen is coming out 
so well.  They decided to paint their cabinets. 
 This is really their first real project together, so
 was proud of them for even attempting it. 
Cause it is quite a job.........but everything
 they have done so far looks awesome.
She did the bottom ones in expresso and
the top ones in white,  and so far, it is really
looking great........................will try to get 
some pics for you to see when it is done.

I am thankful
that we finally found a new microwave, as
 ours quit working Easter morning. We wanted
 a white one and they are very hard to find these 
days.  So had to order one online, and it want be
 here until sometime before April 15th.  Man, do
I miss it.......................lol  You don't realize how
much you use that buggar till it's gone.........

so will be very thankful when it arrives.

for people and Pastors who can teach God's
word and just make it come alive to us, it is 
an incredible blessing to us.

for the gift of Jesus and prayer..........because
 without Him and prayer I really don't know how
 people navigate life on this wonderful yet some-
times very discouraging planet,  and I am 
thankful that I don't have to do it 
without Him..........
